Galician-style pancakes (Filloas de Entroido-inspired) // Carnival food
🌱🥞🎭 Happy Pancake Tuesday! “Mardi Gras” (Fat Tuesday), Shrove Tuesday, or “Martes de Carnaval” (Carnival Tuesday) is the final day of the Carnival which means time to eat delicious pancakes!
➡️ Galician filloas (Galician pancakes) similar to French crêpes are traditional treats of Carnival time in Galicia, northwest Spain. There is no standard recipe, each Galician region and family twitches it a bit.
- INGREDIENTS
200g flour
250ml oat drink or any veggie drink
250ml water
A pinch of salt
1 lemon peel in strips
Veggie oil, for the greasing
Unrefined cane sugar, for sprinkling
- METHOD
1. Mix the flour, oat drink, water, and salt in a bowl and whisk until the dough is homogeneous. Make sure that no lumps remain.
2. Add lemon peel to the mix and let the dough stand for at least 15 minutes.
3. In a non-stick pan, add a jet of veggie oil. When the oil becomes hot, add the dough right in the middle of the pan and make circular movements for the dough to be properly spread.
4. The idea is to obtain a little layer that covers the base of the pan. When the edges start to brown, it is time to flip it. You can use a spatula to prevent it from tearing.
5. Serve filloas on a plate with sugar on top. You can also fill them with cream, chocolate, honey… Bon appetite!

*Some people in Galicia have a special type of pan known as filloeira. With them it is possible to make several filloas at a time but, if this is your first time, it is better to go one by one.
*Do not worry if the first ones are not properly made; No doubt the next ones will be just perfect.

📗 Shrove Tuesday is the day that immediately precedes Ash Wednesday, which is the first day of Lent in Christianity. Pancakes are associated with Shrove Tuesday, the day preceding Lent, because they are a way to use up rich foods such as eggs, milk, and sugar, before the fasting season of the 40 days of Lent.
🎭 In Galicia, the Carnival (O Entroido) has a long tradition. It is celebrated throughout the community, although the province of Ourense is the undisputed queen. It is the magic triangle that includes the municipalities of Xinzo, Laza, and Verín, with an ancient tradition of rural carnival with its typical characters such as Peliqueiros and Cigarróns among others.
