French-style onion pie (Tarte a l’Oignon-inspired)

🌱🧅🍕🇫🇷 Grandma Sita learns with Raphael how to make delicious French-style onion pie. This yummy plant-based recipe is inspired by the popular Tarte A L’oignon which is a classic French onion pie. It can be a very quick easy recipe if you start with a pre-made pie dough, and with a simple salad on the side, it makes a perfect plant-based meal. 

😋 This French onion pie is simple, healthy, and so tasty. There are just lots of braised onions, wine, herbs, a little olive oil, and salt. You can change the recipe according to your taste, so have fun experimenting, but don’t forget to cook up some complementary plant-based food like salad or roast veggies.

INGREDIENTS

FOR THE DOUGH
2 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons active dry yeast
3 tablespoons olive oil
1/2 cup warm water
A pinch of salt
Tip: For this recipe, make whatever dough you like (e.g. shortcrust, pizza, empanada,…) all doughs work well.

FOR THE TOPPING 
1kg onions (red, white, your choice)
4 cloves garlic
1 sprig of thyme, savory, and oregano (any other mix of herbs, your choice)
½ cup olive oil
1 bottle of wine (red, white, your choice)
2 tablespoons mustard
2 tablespoons honey (optional)

METHOD

*For the dough
1. Mix the dry ingredients (flour, baking powder, and salt) in a medium bowl.
2. Pour the warm water and knead a couple of times to just barely mix the dough.
3. Pour the olive oil and knead for 5 minutes until the dough is homogeneous and forms a ball that pulls away from the edges of the bowl.
4. Wrap dough in plastic wrap and chill for at least 30 minutes.

*For the topping
1. Preheat the oven to 180 º C.
2. Cut the onions and garlic, thinly sliced.
3. Spread the dough onto an oiled and floured baking sheet on a baking tray.
4. Bake for 10 minutes until the crust is a bit golden brown.
5. In a large pan, on low heat fry ​​in olive oil the sliced onions with chopped garlic cloves.
6. Once the onions are starting to get transparent, add wine, then mix herbs (thyme, savory, and oregano), mustard, and honey (optional). Let evaporate a bit, should not be liquid.
7. Take the pie from the oven, and let stand for 5 minutes before spreading the fried mixed onions on top.
8. Bake for 10 minutes until it looks nice.
9. Serve warm or at room temperature and Bon appetite!
