Canary-style wrinkled potatoes with dips (Papas arrugas con mojos-inspired)
🌱🌶️🥔🇪🇸 Grandma Sita learns with David how to make Canarian-style mojo sauces spread over wrinkly potatoes, one of the region’s most famous dishes.
😋 This tasty plant-based recipe is inspired by the popular “Mojo Verde” (green mojo) and “Mojo Picón” (spicy red mojo) sauces served alongside “Papas Arrugadas” which translates to wrinkly potatoes.
INGREDIENTS
*FOR GREEN MOJO
3 cloves of garlic
1/3 green pepper
A handful of parsley
One teaspoon of coarse salt
One teaspoon of cumin
One coffee cup of olive oil
A bit of vinegar
*FOR SPICY RED MOJO
3 garlic
1/3 red pepper
1/3 hot chili pepper
One teaspoon of coarse salt
One teaspoon of cumin
One teaspoon of paprika
One coffee cup of olive oil
A bit of vinegar
*FOR WRINKLY POTATOES
Baby potatoes
Coarse salt
METHOD
*Green Mojo/Mojo Verde
1. Add 3 cloves of garlic to a container.
2. Chop the green pepper and the parley and add them to the container.
3. Add coarse salt, cumin, olive oil, and a tiny bit of vinegar.
4. Blend everything and adjust the ingredients.
*Spicy Red Mojo/Mojo Picón
1. Add 3 cloves of garlic to a container.
2. Chop the red pepper and a bit of hot chili pepper and add them to the container.
3. Add coarse salt, cumin, paprika, olive oil, and a tiny bit of vinegar.
4. Blend everything and adjust the ingredients.
*Wrinkly potatoes/papas arrugadas
1. Clean the potatoes and put them in a pot.
2. Fill the pot with water but without covering the potatoes completely.
3. Add 3 tablespoons of coarse salt.
4. Boil on medium heat until potatoes are soft.
5. Remove half of the water and boil until all water is consumed.
6. Served wrinkly potatoes/papas arrugas with both a Green Mojo/Mojo Verde and Spicy Red Mojo/Mojo Picón, they make memorable and delicious tapas. Enjoy!
